For the first time since our honeymoon, hubby and I snuck away for a long weekend in Seattle last summer. I’m still holding onto the memories of that amazing weekend, full of adult drinks, leisurely adult talks, adult drinks, uninterrupted sleeps that didn’t involve tiny humans in our bed, adult drinks, and ADULT DRINKS. Oh, and I almost forgot to mention. Seattle offered some amazing adult drinks.
At one of the many restaurants at Pike Place Market, I saw The Last Irresistible on the drink menu and thought I would give it a try. A few (plus/ minus 10) drinks later, and we stalked the bartender to find out just how to make this delicacy.
Hubs and I pretended like we were college kids again and man it felt good to forget about “adulting” for a few days. We saw the sights, ate great food, watched an amazing couple tie the knot in star studded wedding day bliss…. Ya’ll, momma did hair, make-up AND heals. In the SAME day! Hubs barely recognized me.
Once back in Minnesota, we set up the test kitchen and had a blast trying to replicate this yummy drink. Here is what we came up with. Try it out and let me know what you think! We’ve appropriately dubbed it The Seattle.
A few notes:
- We typically use 1/4 – 1/2 of a lemon wedge and squeeze the juice directly into the shaker
- I am a firm believer that a sugar rimmed martini glass brings on a happy day, but you could also try plain or with salt
- Did you know that you can make your own simple syrup and store it in your fridge instead of buying it in the store? Boil equal parts of sugar and water. That’s it!
